i(0185)'s {M} i(5204 Fatima) making of yourt: milk brought to boil then allowed to cool until one can just bear one's finger in it (60 degrees C). A little
ayran added - (some water must be added to yourt) - 2 teaspoons to a large earthenware jar of milk, and then left. After several hours it will form yourt.

For the winter - a large quantity of 'ayran' placed in a large earthenware jar, sufficiently porous to allow
{ turn to p.35} water to leak off. Ayran dries forming a substance like thick cream cheese - finally dries almost to a powder. Placed in a bag, and can be
stored throughout the winter. When needed, the 'ayran' powder is mixed to a paste with water and used to make soup with cereal such as bulgur.
